The Sibly Food Co

In December 2018 Matthew Collins set up a bake stall at a local Christmas market in Cork. This grew into The Sibly Food Company.

Matthew has always loved food and the experiences food presents, from large family gatherings as a child to going out for food with friends today.

My intent from day one was to create food that gives you that unbeatable feeling of giddy happiness when you eat something you enjoy, and to this day, that has not changed. I really hope you get the chance to experience that from my food.
At The Sibly we believe that we can leave more than just great food memories with our customers & the wider community. We strive to support local producers, such as Kerry farmers. We purchase all of our fresh cream from Lee Strand Dairy. To complete your favourite cheesecakes, all of our cream cheese is from County Tipperary. Furthermore we only use Irish butter in everything we produce. As well as Cream from Kerry & Cream Cheese from Tipp, each individual Sibly Energy Ball we make is made using Flahavan’s Irish Oats straight from Waterford, it’s a true Munster affair! It stretches beyond the ingredients too. Our stickers are designed in Kerry and printed in Limerick. A Kerry business produces our boxes. All of our transport is done by a Cork company and our website is designed & maintained by a Cork man!

The Sibly Food Co range includes energy balls. flapjacks and other delights.

The dreamy lunch box treat for you, or the kids! Packed with Irish Oats and finished with Belgian Dark Chocolate drizzle, our flapjacks guarantee to leave you perfectly satisfied as you power through your day.
